Middle Eastern Tabouli Salad

Tabouli Ingredients

1 cup dry bulgur wheat or quinoa

1 small red onion

1 bunch flat leaf parsley

6 roma tomatoes

Dressing Ingredients:

½ Cup Extra Virgin Olive Oil

½ Cup Red Wine Vinegar

1 Lemon, Juiced

1 Tsp Garlic Powder

1 Tsp Salt

¼ Tsp Black Pepper

½ Tsp Dried Oregano

½ Tsp Dried Basil

For the tabouli cook your grain according to package instructions and allow to completely cool. Wash all vegetables thoroughly. Dice tomatoes and onions finely. Chop parsley and add all ingredients to a large bowl.

For the dressing add all ingredients to a mason jar and shake well. Pour dressing into bowl with other ingredients and stir to combine.

Serve with hummus, olives and pita bread for a fresh and delicious dinner. You can also add feta and cucumbers to this salad if you like!

Sommelier Wine Pairing: I love this salad with a fresh fruity white wine like an Oregon Pinot Gris or New Zealand Sauvignon Blanc!
