Crumble Top Blueberry Muffins

3 large very ripe bananas

¾ cup sugar

1 egg, beaten 

1/3 cup avocado oil

1 tsp vanilla 

1 cup blueberries 

Zest of 1 lemon

1 ½ cups all-purpose flour 

1 tsp baking soda

1 tsp baking powder 

½ tsp salt 

Streusel topping

4 tbsp brown sugar 

1 tbsp flour 

2 tsp avocado oil

Mash bananas, add sugar, egg, oil, vanilla and stir thoroughly. Add blueberries and lemon zest. Whisk together all remaining ingredients and stir gently into your wet ingredients. To make your streusel topping mix together brown sugar and flour, breaking up any sugar clumps by hand. Stir in avocado oil and mix well. Pour 1/3 cup portions of batter into muffin tins and top with streusel. Bake at 375 for 15 – 17 minutes.
